There are many quick, easy, simple dinner recipes for singles. It all depends on whether you want to do the cooking, eat out, or pop it in the microwave. There are many places to stop and grab a dinner that has been pre-cooked or you can just get the main dish pre-cooked and add your own sidedishes to your main course. Salad is always easy to add to any main dish, and there are many varieties of salad. There is potato salad, lettuce salads, cole slaw, shrimp salad, jello salad, and more.
If you like to cook, there is always chili, soups (such as vegetable, potato, tomato, pea, bean, chicken noodle, and more). These can either be made from scratch which are very easy or you can open a can and warm it in the microwave or on top of the stove. If you make your own soup you will no doubt end up with a lot left over so you can divide it in portions and freeze it in freezer containers and take out one at a time as needed in the future. I do this all of the time. It comes in handy when I do not feel like cooking or don't have the time.
Mexican foods, such as tacos or burritos, are also very easy and quick to make. There are different variations of these too. I make a pretty good taco casserole that is very good to freeze in portions and bring out when you are hungry for Mexican food. Burritos can be put into a cake pan with salsa poured over it with grated cheese sprinkled on top and baked for a little while until the cheese melts.
I don't know about others but I love Ham or Bacon and Beans with fried potatoes and cornbread or homemade rolls. I cook the beans in a crockpot all day then in the evening all I have to do is fry a potato and make my cornbread. If you want homemade rolls or fry bread with the beans, it only takes a few hours for this to be done. Of course there is always the pork chop or fried chicken with the mashed potatoes, gravy, and vegetable. Or there is always the option of the baked potato which you can do in the microwave in 4 to 6 minutes. None of these meals takes me more than an hour to fix, with the exception of the beans, of course.
I never run out of options. I have cooked for many years but I still have my favorites. Hope this gives you a few ideas.
